Since trialling our Hello Fresh box a couple of weeks ago, I haven’t made a lot of meals from scratch. Mainly this was due to time, so knowing that Miss A loves her fish, I cobbled together a quick salmon noodles dish this week to use up some decidedly past their best broccoli and mushrooms that I found in the fridge.
You can add any vegetables to this dish that you like, but as I said my choices were to use up before they went to waste. I stir fried my veg and left to saute for a few minutes whilst the salmon was cooking.
The noodles were cooked within a couple of minutes and I left them in their water to prevent them going all stodgy. The salmon was cooked on my new George that I seem to use all the time now. It meant our dinner was cooked within ten minutes from start to finish and tasted great.
I finished the dish off with a generous splash of soy sauce for flavour. I would add garlic next time too to the vegetables.
Salmon noodles is definitely a recipe I’ll store for future use to remind myself that no time doesn’t mean I have to resort to convenience foods or takeaway.
