Lentil Fritters

There’s nothing exciting in the fridge or the cupboards, so what do you have for lunch when you don’t want to go to the shop and spend money for the sake of it. This was me the other day, and I REALLY didn’t want to spend money, so I rooted through the cupboards and found a bag of lentils I had forgotten about. There were eggs in the fridge so I decided to have a go at making some lentil fritters.

They didn’t take long to prepare and make at all, and they work out to be a very cheap and filling snack. I ate half of mine for lunch straight from the pan, and enjoyed the rest for lunch the next day. The beauty of the above recipe is that you could add anything you wanted to these fritters to make them even more filling.

I am going to try these very soon! Due to a health problem, I need to follow a high protein diet. These will be perfect! Thanks 🙂

I’ve been meaning to make lentil fritters for absolutely ages for my kids. I’ve bookmarked this recipe to remind me to try yours when I get around to it.
