In the days following Christmas Day, I imagine your fridge is still bursting with left over meat and other ingredients. Eating turkey sandwiches is great on Boxing Day but the novelty wears off quite quickly in our house. I’m not sure why we do it and I know we’re not alone, but we have always got plenty of leftover everything. I need inspiration to be able to use up our leftover turkey so it doesn’t end up being wasted because we’re sick of the sight of it. Some of my favourite leftover turkey recipes are:-
Turkey curry is the most obvious choice to use up that leftover turkey, but it doesn’t have to be boring. You could make a Thai turkey curry that I have made on previous occasions. It’s a nice light version of a curry that goes well with naan breads and popadoms which makes a change from serving with rice.
If you do like rice then there are plenty of ways to make a risotto. Use any ingredients you may have left in the fridge to add to the turkey to make a filling and simple meal
Spice it Up
There are always spices kicking around in the cupboards so if you’d like some inspiration, check out my post on what to cook with spices when you lack inspiration. Just use your leftover turkey as your main meat ingredient.
Leftover turkey sandwiches don’t have to be boring, Make it a toasted sandwich with added ingredients such as leftover chutneys and sauces from the festive spread.
Eat around the World
I have cooked with some very different ingredients on the blog in the past which include eating around the world. One of my favourites was Arabian style turkey with crushed garlic potatoes. Take a look and give it a go, I promise you won’t feel like you’re eating leftover turkey.
Make it light
If you’re sick of heavy meals with potatoes and pasta, try making a stew with chorizo and chick peas. Change the chicken in my chorizo stew recipe for leftover turkey and enjoy something a little different.
Turkey doesn’t have to be boring, and I know we all have far too much left over that it can sadly go to waste if the inspiration isn’t there. Love your leftover turkey and start creating in the kitchen.
