Do you ever look in the freezer and be uninspired with the contents? I do especially if I have bought a pack of cubed steak. I have good intentions to make a slow cooker beef curry or casserole but somehow the inspiration escapes me when it comes to this packet of meat.
I was determined not to let this packet sit in the freezer for weeks, and I had plenty of potatoes that needed using up, along with a large bag of carrots, so I cobbled it all together to make an easy steak pie.
You could also make the filling in the slow cooker which would make the meat very tender, I chose to cook mine in the oven as I didn’t have enough time for the slow cooker.
Ingredients (serves 4)
- 450g diced steak
- 3 large carrots, chopped
- 4 large potatoes, sliced
- 200ml gravy
- 1 onion, chopped
- any other vegetables you wish to add
- salt and pepper
Par boil the sliced potatoes for five to ten minutes and remove from heat. Meanwhile add the beef, carrots, gravy, salt, pepper and onion to an oven proof dish and cook for thirty minutes. Layer the sliced potatoes on top and cook for a further thirty minutes to brown the potatoes and cook through.
This is such an easy dish to make that even hubby could do it without messing it up too much. Serve with seasonal vegetables on the side and enjoy.
