Cooking healthy meals for my family when we’re on a short time frame after work, and school activities is something I am always struggling with. For this reason I am always on the lookout for inspiration and new things to try.
Cooking in my microwave isn’t something I do very often. It gets used in the mornings for porridge, or to make some popcorn, but aside from that it doesn’t get used very often.
I was quite pleased to happen upon some ideas for microwave cooking which have turned out to be quick, easy and nutritious, which is perfect for me after a long day at work.
Vegetable Couscous is easier than I thought, and to be honest I would never have thought of using a microwave before to prepare or cook it. What I liked from watching the recipe being cooked was that I could prepare the vegetables at the beginning of the day to save even more time at the end of the day.
I didn’t even realise you could cook chilli con carne in the microwave before watching this recipe being cooked. It’s a great idea to be able to multi task as a working Mum. I have been known to forget about the dinner cooking before whilst trying to get the homework, washing etc completed.
I’m a big fan of salmon, especially when I’m trying to eat healthier. Salmon in the oven takes a lot longer than I like when I’m in a hurry. However this recipe really caught my eye as 6yo loves her prawns, and to be able to combine the flavours from the salsa and incorporate her eating salmon works for me.
My meal planning will be a little easier next week.
