Cooking With Potatoes - The Life Of Spicers #recipe


The┬ápotato is very versatile and most of us use them as a part of our meals on a daily basis. I get bored with the same food all the time so I’m always trying to mix things up a little in the kitchen.

There are two things I REALLY don’t like when it comes to eating potatoes

  1. Plain boiled potatoes
  2. Mashed potato without something added to it, or in large quantities.

But as there is so much you can do with potatoes, I don’t let this put me off, so here are two of my favourite meals that we make with potatoes.

The first is one pot potato bake. This is an easy meal to make when I am lacking time and inspiration. It also means I don’t have to worry about cooking too many things for one meal.

Slice or chop some chicken or turkey breasts and place in a large dish. Add one sliced potato per person, and layer over the meat. You can either make a cheese sauce for this or use a packet mix. On this instance I used a packet mix as I had one in the cupboard, but it’s lovely with a home made cheese sauce as well. Pour over the sauce so it covers the potato layers. If you need to add a little water to ensure the potatoes don’t burn on top.

Add grated cheese and cook in a 200 degree oven for around thirty to forty minutes or until the potatoes are soft. If you don’t add enough water then the potatoes don’t cook very evenly.


My next favourite is something I cook to entice Miss A to eat mince, as if I put a plate of spaghetti bolognaise in front of her or similar, she seems to be going through a phase of “I don’t like the meat”.

Put one large jacket potato in the oven per person, or use more smaller potatoes. Once cooked, scoop out the potato and leave the skins to one side. Add a small amount of cheese to the potato and mash together.

Cook a mince base such as mince, onions and mushrooms, and have ready for when the potatoes are cooked.

Fill the jacket skins with the mince mixture, add a generous amount of mashed potato on top and sprinkle with cheese. Brown off under the grill or back in the oven for ten minutes.

I like to mix my cheese up and add some chilli cheese to give the finished meal a little kick, but cheddar works really well too.

    A woman after my own heart. I adore potatoes, but if I try and eat plain mash or boiled potatoes I gag, I can’t do it. My parents used to make me sit at the table until I finished my mash and I’d actually be sick, and I think that’s scarred me for life.

      yes I’m the same, but wedges that replicate mash inside is fine etc.
