Having three of us that eat on a daily basis in the house, we can often end up with left over meat or other ingredients, so I am always looking for ways to use up the extra the next day, or turn it into something a little bit exciting so the meat stretches to another meal rather than just being used as a sandwich filler.
If you have pork left over, then you could turn the extras into BBQ pulled pork which is amazing if you cook it in the slow cooker. It’s equally as nice cooked quickly on the hob as well.
Pork also works well if you have a small amount and mix with some chicken and tortilla wraps to make a pork and chicken stack. This was a bit of an experiment that I tried out that actually worked quite well.
Chicken will often feature on our Sunday lunch menu, and throwing everything in together to make a chicken, chorizo and chickpea stew has worked well on many occasions when I have either half a bag of spinach to use up, or left over chicken.
If beef is more your meat of choice, then why not stir fry some left over beef with pak choi and serve with rice. Plenty of garlic and chilli makes a lovely aroma when cooking.
I can always find some bacon in my fridge and there is usually some pastry in the freezer as I cut the blocks up into portions when I buy it ready made and freeze for when I need it. I like to add leftover cheeses, or vegetables to have a bacon tart that is great hot or cold.
