When Fruit Bowl asked if we would like to try some snacks, who were we to refuse. Perusing their website, I noticed there was a lot of baking going on using the products, so it would have been rude not to give one of the recipes a go.
On to the snacks first.
We received a mix of Fruit shapes in jungle and under the sea shapes, school bars and fruit flakes. Each packet / bar count as one of a child’s 5 a day which is a bonus on some days when we are struggling to get 7yo to eat enough fruit and veg. Starting at £1.79 for a box of five school bars, these are good value for adding to the lunch box.
My favourite of the three were the jungle and sea shapes. They look like small sweets, and they taste very similar to sweets too. Whilst they are very sweet as they contain all the condensed fruit sugars, they don’t contain extra additives or preservatives.
On to the cooking….
White Chocolate Cookies with Raspberry Fruit Flakes
- 110g Unsalted butter
- 110g caster sugar
- 110g Light muscovado sugar
- 1 Egg
- 1 tsp (5ml) Vanilla essence
- 170g Plain flour
- ½ tsp Baking powder
- ¼ tsp Salt
- 150g White chocolate, cut into small pieces (or chocolate chips)
- 80g RaspberryFruit Flakes®
Cream the sugar and butter together until smooth, add the egg and flour, baking powder, salt a little bit at a time until it forms a dough consistency. Add the fruit flakes and white chocolate chips to the dough and mix lightly.
Roll into small balls and place far apart on a greased baking dish for ten minutes at 180 celcius.
The cookies have a chewy, light consistency, that stay soft and fresh for days after (if you can leave them that long).
