Friday Night’s are made up of two things in this house. It’s either a meal out, or a very quick dinner as we’re all shattered from the week.
I had some creme fraiche left over in the fridge this week, so I decided to create what would hopefully be a nice curry with store cupboard ingredients. My Friday Night Fakeaway is as follows
I made a curry powder from mixing cumin, coriander, ginger and chilli powder to taste. I made up the quantities but it was approximately 1tbsp cumin, 1tsp of both coriander and ginger, and the same of chilli powder as 6yo doesn’t like it to be too hot.
You can literally add any vegetables to this you have lying around. I only had mushrooms left but green beans, peppers etc would work well.
The sauce was made up from tomato puree and passatta, and then I added water if it needed extra liquid.
I coated the chicken in the spice blend. You could use any meat or even a vegetable base would work as well. With all the other ingredients aside from the creme fraiche added, it was left to simmer until the meat was cooked through.
Stir in the creme fraiche right at the end and serve with rice. Enjoy!
