We all love a Sunday Roast in this house. It’s even better when we make the joint stretch for another couple of meals as well. Last weekend we enjoyed a gorgeous roast beef using a joint from our Red Tractor hamper. There was plenty left over from the generous joint, so dinner the following evening was a stir fry served with rice.
Left over beef
1 garlic clove
1tbsp sesame oil
Slice meat into strips and add to a hot pan with oil and garlic
Cook for a few minutes to heat through
Throw in sliced pak choi and any other vegetables you wish to add
Stir fry for a couple of minutes to heat the vegetables
Serve with rice
So quick and easy to do. You can literally make this within ten minutes including prep time if you have frozen or packet rice for convenience.
With even more meat left over, Hubby enjoyed beef sandwiches for lunch, and I chose a beef salad. The ingredients used in the salad were also from my hamper making them Red Tractor Products.
This particular joint of beef was from Aldi, somewhere I have never shopped but keep meaning to. It was a great bargain joint at £7.99 per KG, perfect for these budget meals
